Variety: 100% Pinot Noir 2020, from a plot that is 22 years old and is part of the Marichal family vineyards.

Variety Characteristics: Pinot Noir is one of the most elegant international varieties, originating from Burgundy. It is characterized by its low tannin structure, medium body awakening refined and subtle sensations on the palate.

Soil: Rolling clayey soils with areas of limestone.

Harvest Date: First half of February.

Harvest Type: Manual collection, in 20 kg crates.

Crushing: Destemmed and macerated at low temperature for 48 hours.

Alcoholic Fermentation: 15 days with selected yeasts at controlled temperature.

Malolactic Fermentation: No.

Aging Potential: 3 years from harvest.

Color: Medium intensity cherry red, characteristic of the variety.

Nose: Expressive, fruity, and somewhat mineral.

Palate: Fresh with a medium and balanced finish.

Serving Temperature: 8-10°C

Pairing: It is a very versatile wine, so we invite you to enjoy it with courage, venturing to try it with that pairing combination that, while it may be the least classic, is the one you enjoy the most.
