Description

Variety: 100% Cabernet Sauvignon.

Variety characteristics: Originally from Bordeaux, France, is one of the most recognised red varieties in the World.  Despite of adapting very well to a great variety of soils, weathers  and latitudes, the Cabernet Sauvignon always maintains its particular character, depending on where it was planted.

Location of vineyards: Etchevarría, Canelones, Uruguay. Only 25 km from the River Plate.

Soil: Calcareous and permeable undulating fields.

Harvest date: Early March.

Harvest: Manually collected in boxes of 20Kg.

Fermentation: 12 days with selected yeasts at a controlled temperature.

Maceration: Until the end of the alcoholic fermentation.

Malolactic Fermentation: Yes.

Color: Intense Bordeaux with Cherry glints.

Nose: Red fruit notes, such as blueberry, raspberry  and cherry, with a spice touch.

Palate: Nice entry, fruity, with herbaceal notes. Present Tanins, yet balanced, with a medium to long finish.

Service Temperature: 16-18ºC

Pairing: Goes very well with empanadas, pasta and red meats.
