Variety characteristics: Sauvignon blanc is a green-skinned grape variety which originates from the Bordeaux region of France. The grape gets it name from the French word sauvage (“wild”) and blanc (“white”) due to its early origins as an indigenous grape in southwestern France. It is now planted in many of the world’s wine regions, producing a crisp, dry, and refreshing white varietal wine.
Location of vineyards: Etchevarría, Canelones, Uruguay, located just 25 km away from the Rio de la Plata
Soil: Calcareous and permeable undulating fields.
Harvest date: Early February.
Harvest: Manually collected in 18 kg boxes.
Cold maceration: 9 hours.
Fermentation: 15 days with selected yeasts at controlled temperature.
Malolactic fermentation: No.
Color: Bright, pale yellow with green glints.
Nose: Fresh and aromatic, with great presence of white fruit such as green apple, with a citric touch.
Palate: Citric and refreshing, with equilibrated acidity. Medium to long finish.
Service Temperature: 8-10ºC
Pairing: A wine that is great to drink by itself. Excellent for appetizers. Goes well with veggie salads, fresh fish and soft cheeses.
