Variety: 100% Pinot Noir.
Varietal Characteristics: Pinot Noir is one of the most elegant international varieties, originating from Burgundy. It is characterized by its low tannin structure and medium body, evoking refined and subtle sensations on the palate.
Vineyard Location: Etchevarría, Canelones, Uruguay. Just 25 km from the Río de la Plata.
Soil: Rolling clay-loam with calcareous areas.
Harvest Date: First half of February.
Harvest Type: Manual harvest, in 20 kg crates.
Crushing: Destemming with light pressure on the grapes to extract a small amount of juice.
Pre-fermentation Cold Maceration: Yes, 3 days.
Alcoholic Fermentation: 14 days with selected yeasts at controlled temperature.
Maceration: Up to 4 days after the completion of alcoholic fermentation. To optimize the extraction of polyphenolic material, daily short pump-overs and mainly punch-downs were used to submerge the cap.
Malolactic Fermentation: Yes.
Proportion of Free-run and Press Wine: 100% free-run wine.
Aging: 80% aged for 12 months in French and American oak.
Aging Potential: 10 years from the harvest year.
Color: Ruby red with cherry reflections. Clear and bright.
Nose: Initial sweet aroma, with notes of black and red fruits, such as currant, raspberry, and strawberry, with a touch of vanilla and tobacco.
Palate: Gentle and delicate on entry. It is an elegant and balanced wine with velvety tannins. Its fruit is confirmed in a riper state. Medium to long finish.
Serving Temperature: 10-12ºC.
Pairing: Pairs very well with fatty fish and lean meats, as well as risottos and soft cheese.

“Vines planted in 2000. 100% Pinot. 12 months in barrel for 80% of the wine, of which 20% is new French oak, 70% older French oak and some older US. Concrete fermenters – old underground tanks from 1938 that have been repaired and were originally painted with epoxy but they have found that this is not necessary.

Lightish strawberry colour. Very pretty and scented red fruits. A little bit of spice on the palate but the fruit shines through the oak. Fresh and silky but with sufficient structure for shape and for the table, with a little fine grip on the finish. Very good. (JH) 13%
